Zucchini Pancakes - A healthy kids breakfast

Sometimes its not about replacing the food that our kids eat but just modifying the things that they already love!

My kids love eating pancakes for breakfast so I wanted to make them a little bit healthier. Instead of using the regular pancake mix which isn't very healthy because the flour in most pancake mixes is refined, it provides you with few nutrients and little fiber.
I decided to test out a healthier version of the pancake & my kids loved it! There are other healthier pancake mixes on the market which I will link for you guys below but I do like just making it myself with whole wheat flour & some baking powder.
Healthy Zucchini Pancake Recipe
Prep time: About 5 minutes Total time: About 15 minutes Serves about 2
INGREDIENTS:
1) 1 Cup of Whole Wheat Flour Mix
2) 1/2 Cup of Organic Whole Milk
3) 2 tsp of baking powder
4) 1/2 peeled & minced zucchini
6) 2 eggs
RECIPE Steps:
1) In a large bowl whisk together flour, baking powder, eggs & milk.
2) Before adding the zucchini make sure you peel it (so the kids don't suspect anything different) and then mince it into the bowl with the rest of the ingredients.
3) Heat the pan with cooking spray & pour 1/4 cup of the batter into the pan. Cook until the surface of the pancake have some bubbles & then flip over.
4) I usually top the pancakes with some maple syrup & a tiny bit of fat free whip cream.
